Crunchy Vietnamese Chicken Salad (gỏi Gà)
  1. In a small bowl, mix together the sugar, fish sauce, lime juice, vinegar, hot water, chilli, and garlic until the sugar dissolves

  2. In a large bowl, toss together the cabbage, carrots, red onion, shredded chicken, coriander, mint, the dressing and olive oil

  3. Serve with chopped peanuts, fried shallots and extra lime wedges on the side
