Prep your ingredients: dice chicken, slice bell peppers and carrots, and mince garlic.
Heat a large skillet or wok over medium-high heat. Add oil and let it sizzle.
Cook the chicken until golden brown (5-7 minutes), stirring occasionally.
Add the vegetables and minced garlic; stir-fry for another 3-4 minutes until veggies are tender-crisp.
In a bowl, whisk together soy sauce, honey (or brown sugar), and sesame oil. Pour over the stir-fry and mix well.
Serve hot on plates, drizzling with extra sauce if desired.
