Matcha Marshmallows
  1. In a small bowl, bloom the gelatin powder with the cold water. Let it sit until it is fully bloomed and jelly-like.

  2. Transfer the bloomed gelatin to the bowl of a stand mixer fitted with whisk attachment. If you don't have a processor... It's a bit of a workout!

  3. Mix the inulin, maple syrup or honey, and ⅓ cup water in a medium saucepan. Heat over medium until the syrup is dissolved.

  4. Turn the mixer on low and carefully drizzle the hot syrup into the gelatin mixture. Once all the syrup is added, increase the speed and whip until the mixture is thick, glossy, and pale.

  5. Add the vanilla essence, matcha, + miso paste. Whisk again until fully incorporated and stiff ribbons form.

  6. Pour the marshmallow mixture into a small, parchment-lined baking dish. Before it sets, top with frozen raspberries.
