  2. Stir cottage cheese and eggs with vanilla and molasses until smooth.

  3. Mix in flour, baking powder, ginger, cinnamon, nutmeg if using, and salt until a soft batter forms.

  4. Spoon batter evenly into 8 muffin cups.

  5. Bake 18–22 minutes until risen and lightly firm.

  6. Cool 3–5 minutes before eating. Enjoy warm.
