Preheat oven to 365°F and line a baking sheet with parchment paper.
In a blender, combine cottage cheese and Parmesan cheese. Blend until smooth.
Scoop ⅓ cup of batter onto the lined baking sheet, spreading it into a thin, but not too thin even circle or oval (about 5–6 inches in diameter).
Bake for 20–25 minutes, until the edges are slightly golden and the center is firm.
Let it rest for 1–2 minutes to firm up before filling.
Add scrambled eggs, veggies, or any toppings you like, then fold gently into a taco shape and enjoy.
