Preheat oven to 400°F (200°C)
In a bowl, toss cauliflower with olive oil, garlic, salt, and black pepper
Spread evenly on a baking sheet
Roast for 25–30 minutes until golden and tender
In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth
Transfer roasted cauliflower to a serving dish
Drizzle with lemon feta sauce and garnish with parsley
Serve warm
