Miso Peanut Soba Noodle Salad
  1. Boil water and cook soba noodles according to packet instructions (usually ~3 minutes)

  2. In the last minute of cooking, add the frozen edamame beans

  3. Drain and rinse noodles with cold water to prevent sticking

  4. Completely cool soba noodles before proceeding

  5. In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, white miso paste, sesame seeds, and water until desired runny consistency is reached

  6. Add all ingredients (cooled noodles, edamame, kale coleslaw, cucumbers, coriander, and fried shallots) to a large bowl

  7. Pour dressing over and mix well
