Anti-inflammatory Vegetable Soup
  1. Prepare the Vegetables: Wash and chop all the vegetables.

  2. Sauté the Base Flavors: Heat olive oil in a large soup pot over medium heat. Add chopped onions and cook for about 4–5 minutes until soft and translucent. Then add garlic and fresh ginger. Cook for another minute, stirring gently.

  3. Add Turmeric and Black Pepper: Stir in turmeric powder and black pepper.

  4. Add the Vegetables: Add carrots, celery, sweet potatoes, broccoli, cauliflower, and zucchini. Mix everything together well and cook for about 5 minutes while stirring occasionally.

  5. Add Vegetable Broth: Pour in the vegetable broth and bring the soup to a gentle boil. Reduce the heat and let it simmer for about 20–25 minutes until all the vegetables become tender.

  6. Add Greens at the End: Add spinach or kale during the last few minutes of cooking. Squeeze in fresh lemon juice.
