Eggplant dip On Steroids
  1. Fry the eggplants in plenty of olive oil, set aside. In the same pan, sequentially fry the onion, tomato, and garlic.

  2. Season with salt, black pepper, coriander powder, chili powder, and sumac.

  3. Add half the pomegranate molasses and half the tahini. Mix well.

  4. Put onto a platter or leave in the fry pan. Drizzle with the remaining pomegranate molasses and remaining tahini, and enjoy with Lebanese bread, saj, or flatbread.
