For the Shrimp Burgers: Place the shrimp on a cutting board and chop it up into ½ inch pieces or smaller. You can also just pulse it in the food processor a few times but be sure you don't turn the shrimp into a paste. In a medium bowl combine all the burger ingredients before adding shrimp. Mix until combined. Divide mixture into 4 equal patties about ½ inch in thickness.
Make the Slaw: Place all the ingredients for the slaw (except cabbage) with ½ teaspoon of salt and start with 3 tablespoons of lime juice into a blender and blend until smooth. Taste and adjust salt and lime juice to preference. Toss ½ the dressing with the cabbage and adjust with more to taste.
Cook the Shrimp Burgers: Heat a swish of olive oil in a large non-stick skillet. Add the patties but do not overcrowd the pan. Do this in two batches if you need to. Pan fry shrimp burgers for 5-7 minutes total or until cooked. Serve over a bed of prepared slaw or on brioche buns with slaw on top. Enjoy!
