In a bowl, whisk sugar, flour, salt, baking powder, and matcha
In another bowl, whisk eggs and milk until frothy
Combine wet and dry ingredients, then slowly stream in the melted butter in 2 batches
Add to a piping bag and chill the batter for at least 3 hours (overnight is best)
Lightly butter the pan, then fill each mold roughly ⅔ of the way
Bake at 190°C for 11–13 minutes until the edges are golden and the tops have a little hump
Cool for a few minutes, release from the pan, and enjoy
