Matcha Madeleines
  1. In a bowl, whisk sugar, flour, salt, baking powder, and matcha

  2. In another bowl, whisk eggs and milk until frothy

  3. Combine wet and dry ingredients, then slowly stream in the melted butter in 2 batches

  4. Add to a piping bag and chill the batter for at least 3 hours (overnight is best)

  5. Lightly butter the pan, then fill each mold roughly ⅔ of the way

  6. Bake at 190°C for 11–13 minutes until the edges are golden and the tops have a little hump

  7. Cool for a few minutes, release from the pan, and enjoy
