Heat oil in a wok on full heat and add cumin seeds and fry until they pop.
Add onions and sauté till they are light pink.
Add tomatoes and sauté for about a minute.
Add salt, red chilli powder, haldi powder, garam masala and dhania powder.
Stir till the tomatoes turn soft and the masala is cooked
Add ginger / garlic paste and sauté for a minute.
Reduce gas to medium. Add the potatoes and water. Mix thoroughly and cover with lid.
Now reduce gas to low, at regular intervals lift the lid and stir the vegetable. Then put the lid back on. Repeat this till the potatoes get cooked (fork tender).
Add capsicum and sauté for about 2 minutes.
Transfer to serving bowl and serve hot.
