Preheat the oven to 180°C fan
Line a 30 x 20 cm tin (or Swiss roll tin) with non-stick parchment paper
Spray the parchment paper lightly with cooking oil
Measure the cottage cheese and eggs into a powerful blender
Add optional seasonings if desired
Blend until completely smooth
Pour the mixture into the prepared tray
Bake for 20-30 minutes until set
Set aside to cool for 10 minutes
Peel off the parchment paper
Add your favorite fillings
Serve immediately for best texture
