2 Ingredient Cottage Cheese Flatbread
  1. Preheat the oven to 180°C fan

  2. Line a 30 x 20 cm tin (or Swiss roll tin) with non-stick parchment paper

  3. Spray the parchment paper lightly with cooking oil

  4. Measure the cottage cheese and eggs into a powerful blender

  5. Add optional seasonings if desired

  6. Blend until completely smooth

  7. Pour the mixture into the prepared tray

  8. Bake for 20-30 minutes until set

  9. Set aside to cool for 10 minutes

  10. Peel off the parchment paper

  11. Add your favorite fillings

  12. Serve immediately for best texture
