Soft & Moist Carrot Muffins
  1. Preheat oven to 375°F. Greased or line muffin tins.

  2. In a large bowl whisk together flour, baking powder, cinnamon, and salt.

  3. Whisk sugar, oil, and eggs in a separate bowl.

  4. Stir egg mixture into dry ingredients just until combined.

  5. Lightly fold in carrots, apples and raisins.

  6. Divide the mixture into prepared muffin tins

  7. Bake 25-29 minutes or until tops are golden and a toothpick comes out clean.
