Tuscan-style Fridge Clean-out Soup
  1. Chop the Spanish onion and grate the garlic

  2. Chop the bacon and cook until crispy, then set aside

  3. Choose your protein (ground beef, pork, chicken, or sausages) and prepare accordingly

  4. In the same pot, sauté the onion until softened

  5. Add the grated garlic, garlic powder, chili flakes, and fresh thyme

  6. Add the tomato paste and cook for 1-2 minutes

  7. Stir in the crushed tomatoes and sun-dried tomato halves

  8. Add the chopped carrot and cook for a few minutes

  9. Pour in the chicken stock and water, then add the powdered bouillon

  10. Add your chosen protein to the pot

  11. Bring to a simmer and cook until vegetables are tender

  12. Add your chosen starch (pasta, rice, or potatoes) and cook until done

  13. Stir in the leafy greens and cook until wilted

  14. Reduce heat and stir in the heavy cream and grated parmesan

  15. Finish with fresh dill and/or parsley

  16. Top with roasted cherry tomatoes if desired and serve
