Chop the Spanish onion and grate the garlic
Chop the bacon and cook until crispy, then set aside
Choose your protein (ground beef, pork, chicken, or sausages) and prepare accordingly
In the same pot, sauté the onion until softened
Add the grated garlic, garlic powder, chili flakes, and fresh thyme
Add the tomato paste and cook for 1-2 minutes
Stir in the crushed tomatoes and sun-dried tomato halves
Add the chopped carrot and cook for a few minutes
Pour in the chicken stock and water, then add the powdered bouillon
Add your chosen protein to the pot
Bring to a simmer and cook until vegetables are tender
Add your chosen starch (pasta, rice, or potatoes) and cook until done
Stir in the leafy greens and cook until wilted
Reduce heat and stir in the heavy cream and grated parmesan
Finish with fresh dill and/or parsley
Top with roasted cherry tomatoes if desired and serve
