Make a lazy vinaigrette in the base of the serving bowl by combining the olive oil, balsamic vinegar, and dijon mustard. Alternatively, you can use half of the oil marinade from the deli olives.
Dice the shallots and let them marinate in the vinaigrette while chopping the other ingredients.
Chop the cucumber, beans, peppers, artichoke hearts, olives, and capers.
Mix all the chopped ingredients together with the marinated shallots and vinaigrette.
If desired, add chopped mozzarella cheese.
