Marinate your beef.
Combine your sauce ingredients.
Separate your gai lan leaves and stems, and slice the stems into thinner pieces.
On a hot, oiled wok, grill your beef until 80% cooked. Set aside.
Add more oil to the wok, and cook your garlic, crushed Thai chili peppers, and gai lan stems for 2 minutes on medium heat. Add the gai lan leaves, and cook until wilted. Scramble 2 eggs on the side. Then mix everything together. Set aside.
Add more oil to the pan along with the fresh rice noodles. Pour the sauce over the noodles, and saute until the noodles have absorbed the sauce. Add the grilled beef and broccoli mixture in, and mix everything together. Enjoy!
