Ingredients
Boil the Noodles: Cook spaetzle to package directions. Drain and toss with a tbsp of butter to prevent sticking.
Caramelize the Onions: In a skillet over medium heat, cook sliced onions in butter and optional oil with a pinch of salt. Stir occasionally for 15-20 min until golden brown and soft.
Combine & Bake: In an oven safe pan or casserole dish:
a. Mix hot noodles with cheese and caramlized onions
b. Season with salt, pepper, and optional nutmeg
c. Bake at 375°F (190°C) for 10-15 min, or until cheese is melted and bubbly
d. Broil 2-3 minutes if you want a golden top crust
Garnish & Serve: Sprinkle with chopped chives or parsley, and serve warm!
