Add the cottage cheese, Parmesan, garlic, and lots of cracked black pepper to a food processor.
Blend until completely smooth. If the sauce is too thick, add a splash of pasta water and blend again until silky.
Toss with hot cooked pasta, adding more pasta water as needed until the sauce is creamy and coats every noodle.
Serve with grilled chicken and extra Parmesan and black pepper on top.
