Tomato Bulgur Pilaf
  1. Begin by finely chopping the onion and dicing the tomato.

  2. In a medium saucepan, heat up the olive oil. Add the onion and sauté for a few minutes on medium heat until the onion is translucent.

  3. Stir in the diced tomato and sauté until it has completely softened, about 2-3 minutes.Add the tomato paste and cook for 2 more minutes. Season with salt and pepper.

  4. Rinse the bulgur 2-3 times and add the washed bulgur.

  5. Increase the heat to medium-high and add the vegetable broth (chicken broth if you prefer). Stir well and let it come to a simmer.

  6. After most of the broth has been absorbed, about 5-7 minutes, lower the heat to low and cover to cook for 10 more minutes.

  7. Serve warm with a light salad or plain yogurt.
