  1. Place sliced jalapeños and shallots in a quart-sized deli container.

  2. Combine vinegar, sugar, water, and salt in a saucepan over medium-high heat.

  3. Once the liquid begins to steam, remove from the heat and pour directly over the jalapeños and red onion.

  4. Allow jalapeños and shallots to soften and come to room temperature before covering and refrigerating.
