High Protein Breakfast Bagels
  1. Cook bacon in the oven according to package settings

  2. In a bowl, whisk together eggs and egg whites

  3. Blend low-fat cottage cheese until smooth and add to eggs

  4. Mix in parmesan cheese and onion and garlic powder

  5. Heat a pan on medium heat and spray with oil

  6. Add enough egg mixture to cover the pan and cook for a few minutes

  7. Fold the edges of the egg to the middle and flip to create an egg pocket

  8. Repeat until you have 8 egg pockets

  9. Toast the bagels

  10. Assemble each bagel with one egg pocket, one slice of cheddar cheese, and 4 slices of bacon

  11. Wrap assembled bagels in foil and store in the freezer

  12. To reheat, thaw in fridge overnight, remove foil, wrap in damp paper towel, and microwave for 2-4 minutes
