Cook bacon in the oven according to package settings
In a bowl, whisk together eggs and egg whites
Blend low-fat cottage cheese until smooth and add to eggs
Mix in parmesan cheese and onion and garlic powder
Heat a pan on medium heat and spray with oil
Add enough egg mixture to cover the pan and cook for a few minutes
Fold the edges of the egg to the middle and flip to create an egg pocket
Repeat until you have 8 egg pockets
Toast the bagels
Assemble each bagel with one egg pocket, one slice of cheddar cheese, and 4 slices of bacon
Wrap assembled bagels in foil and store in the freezer
To reheat, thaw in fridge overnight, remove foil, wrap in damp paper towel, and microwave for 2-4 minutes
