Clean the mushrooms and cut them in half
Cut the peppers into thin strips, slice the onion and the tomatoes
Place all the vegetables in a bowl, add salt and pepper, mix well and transfer them into a baking dish
In a bowl, mix all the sauce ingredients
Add the mushrooms to the sauce and mix well until they are fully coated
Transfer everything to the baking dish
Bake in a preheated oven at 190°C for about 30-40 minutes until veggies become tender and release their juice
Remove from the oven and sprinkle grated melting cheese on top
Return to the oven and bake until the cheese melts and becomes golden
Serve hot
