Chickpea Chocolate Protein Bars
  1. Preheat oven to 350ºF

  2. Drain 1 can of chickpeas and rinse well

  3. Blend chickpeas with ⅔ cup greek yogurt

  4. Add mixture to a large bowl with 2 eggs and 1 tsp vanilla extract

  5. Mix in ⅓ cup monkfruit or granulated sweetener of choice

  6. Add in ⅓ cup oat flour, 1 tsp baking powder, and ¼ cup vanilla protein powder

  7. Fold in ½ cup chocolate chunks

  8. Pour into a parchment lined 8x8 pan

  9. Bake for 25-27 minutes

  10. Allow to cool and enjoy
