Caramelized Beet Salad
  1. Preheat oven to 400°F.

  2. Using a mandoline slicer (I use a safe stand one linked in my Amazon shop), slice beets and onions very thin.

  3. Transfer slices to a large bowl. Add olive oil, salt, and pepper. Toss to coat.

  4. Spread onto a full-size lined baking sheet. Make sure all slices are evenly coated.

  5. Roast for 1 hour to 1 hour 15 minutes, stirring every 10–15 minutes so they don't burn.

  6. Once caramelized and tender, remove from oven.
