Debone your chicken drum sticks - chicken thighs are fine too, but drumsticks have a juicer texture for this dish.
Slice half a white onion thinly, set aside.
Marinate your chicken with the soy sauce, dark soy sauce, oyster sauce, and brown sugar.
In a bowl, mix together the dashi broth and sake, set this aside.
In a hot oiled pan on medium heat, add in the chicken and let it brown on all sides. This should take about 5 minutes.
Once the chicken has cooked about 75%, add in the sliced onions.
Saute the onions and add in the dashi broth, you can add as much or as little as you like.
Mix and simmer the chicken for another minute and once the chicken is just cooked, add in 2 beaten eggs and cover for another 1 minute.
Top it off with scallions and serve over rice! Optionally add in another egg yolk for richness.
