Ingredients:
Dice potatoes into 1.5cm pieces & fry in olive oil till nicely browned.
Add a cup of water to the potatoes, cover and boil on medium heat for 10 min, or until the water completely evaporates.
Add the tomatoes and fry them with the potatoes for a few minutes. Season with salt and black pepper.
Remove the pan from heat and add the eggs, mixing thoroughly.
Lower heat to low, cover the pan and cook until eggs are done - approx 5 min.
Serve with paratha
