Line your pan with parchment paper and set aside.
In a large mixing bowl add the unflavored gelatin and ½ cup of water. Mix well and set aside for 10 minutes.
In a small sauce pan set to medium high heat add ⅔ cup of water, allulose and brown sugar swerve. Combine and bring to a boil for 2 minutes. (No need to stir)
Quickly add boiling sweetener to the gelatin while mixing on low. Once all the sweetener is added mix on HIGH for 15 minutes. DO NOT STOP MIXING.
Halfway through mixing (minute 7ish) add salt. Once salt is mixed in add the vanilla extract. Let it continue to mix until the 15 minutes is up.
After the 15 minutes is up, quickly fold in the grated chocolate with a spatula.
Pour marshmallow mixture into your pan and spread evenly.
Let sit for at least 8 hours before cutting.
