Heat the olive oil in a frying pan over a medium-high heat.
Add the finely chopped red onion and sauté for 2–3 minutes until softened.
Add the garlic, paprika, oregano and a generous pinch of salt. Cook until fragrant, then add the butter beans, lemon zest and lemon juice.
Lower the heat, cover with a lid and simmer for 10 minutes.
Meanwhile, preheat the oven to 180°C fan.
Transfer the beans to a baking dish and bake for 20–25 minutes, until golden and bubbling.
Stir through the fresh parsley and dill, then bake for another 5 minutes until the herbs have softened.
Serve warm with crusty bread or pitta and mop up all that glorious zoumi.
