Make the dressing. In a small bowl, whisk together the olive oil, lime juice, and honey until combined. Season with sea salt, to taste. Set aside.
In a large bowl, toss the cucumber, avocado, mango, and cilantro. Drizzle with the dressing and add a pinch of crushed red pepper (if using). Toss one more time until combined.
Serve immediately, or refrigerate in an air tight container for up to 2 days. Enjoy!
