Moroccan-style Baked Sardines
  1. Heat the oven to 200°C.

  2. Blitz the chermoula ingredients in a food processor until you have a rough paste.

  3. Spread a little chermoula on each sardine and sandwich them together in pairs.

  4. Mix the chopped tomatoes, shallot and remaining chermoula in the bottom of an oven dish.

  5. Layer the potato and tomato slices on top, alternating one of each.

  6. Add the pepper and chilli, then lay the sardine pairs on top.

  7. Finish with lemon slices, a generous drizzle of olive oil, oregano, salt and pepper.

  8. Bake for about 1 hour 20 mins, until the potatoes are soft. Cover with foil halfway through if it browns too quickly.

  9. Scatter with fresh coriander and serve with bread to mop up the juices.
