Strawberry Cake Filling
  1. Whisk together water and cornstarch in a small pot over low heat until no lumps remain. Increase heat to medium. Add in strawberries and sugar, bring to a simmer, then reduce heat and cook until thickened, about 5-7 minutes. Stir often.

  2. Stir in lemon juice, remove from heat and let cool completely before using. It will thicken more as it cools.
