Maple Roasted Apple Loaf Cake
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

  2. In a medium bowl, toss the diced apples with 2 tablespoons of maple syrup. Spread them evenly on a baking sheet and roast in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized. Remove from the oven and let cool slightly.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

  4. In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-4 minutes. You can use an electric mixer or a whisk.

  5. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk and ¼ cup of maple syrup. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.

  7. Gently fold the roasted apple pieces into the batter until evenly distributed.

  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the chopped nuts evenly over the top.

  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil.
