If needed, cook chicken breasts & rice.
GREASE a 13x9 glass baking dish. Preheat over to 350 degrees.
COMBINE Cream of chicken soup, poppyseeds, & sour cream.
MIX half of sour cream mixture with rice & layer on the bottom of the baking dish
MIX remaining, sour cream mixture with cheddar cheese, & chicken in a mixing bowl. Add on top of rice layer
MELT butter. In a plastic bag, crush Ritz Crackers. In a separate bowl, combine crackers and butter. Top the casserole with this.
Bake for 30 minutes or till edges bubble.
