Coconut Spinach Chickpea Curry
  1. Heat oil in a pan and add the diced onions.

  2. Add 1.5 tsp of salt and cook the onions until softened.

  3. Add the ginger garlic paste and cook for a minute.

  4. Add the spice mix (turmeric, coriander, curry, chili, Kashmiri chili, and kasoori methi) and cook for a minute.

  5. Add the tomato puree and cook until thickened.

  6. Add the chickpeas, baby spinach, and coconut milk.

  7. Simmer the curry until it reaches the desired consistency.

  8. Add the fresh coriander and sliced green chilies.

  9. Serve hot.
