Season short ribs well with salt and pepper. Sear hard on all sides. Remove from pan.
Remove most of the fat from the pan. Add aromatics and cook while stirring occasionally for 3 minutes
Deglaze with sake
Add honey, soy, star anise. Stir until combined.
Add short ribs, cover with stock, cook at 325f covered for 3 hours
Once tender strain off liquid, thicken with a cornstarch slurry
Serve over mashed potato with plenty of sauce and sliced green onion.
