Prepare the dough quickly with cold ingredients, avoiding touching it with hands.
Place the flour like a volcano and add cold butter cut into small flakes.
Rub the butter into the flour with fingertips until incorporated.
Create a volcano shape with the flour and add yolks and icing sugar in the middle.
Beat the yolks and sugar with a fork without including the flour.
Cover the mixture with flour and break the grains with a fork.
Use a spatula to quickly work the mixture, moving it from the sides to the center.
If too dry, add a little cold water (around 3 spoons).
Form the dough into a ball, cover with plastic foil, and refrigerate for at least half an hour.
After refrigeration, roll out the dough and place it in a cake pan, forming the borders by hand.
Bake for about 20-30 minutes at 180°C.
