Homemade Granola Bars
  1. Line an 8x8 baking pan with parchment paper.

  2. In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.

  3. Add the oats, chocolate chips, chia seeds, and nuts and stir. A stand mixer with the paddle attachment is best.

  4. Press firmly into pan. Use something flat, like the bottom of a measuring cup, to pack firmly and flat.

  5. Bake at 325 degrees for 15 minutes. Let cool completely before slicing.

  6. Store bars in the fridge.
