Dice half a white onion
Mince a bunch of ginger and garlic
Slice green onions for garnish
In a pan cook down your onions, ginger, and garlic until fragrant and translucent
Add in the red curry paste, mix, and cook for a few minutes
Add in the coconut milk and chicken broth and mix on medium heat until the paste is incorporated in the liquid
Boil some soup dumplings on the side
Pour the broth over the soup dumplings in a bowl, garnish with green onions, and enjoy!
