Low Effort Oven-baked Chicken Thighs With Vegetables
  1. Preheat oven to 350F

  2. Add chicken into an oven safe dish and season generously with garlic powder, paprika, Italian seasoning, salt and pepper

  3. Drizzle with olive oil and mix to coat everything together

  4. Add in carrots and shallots

  5. Add bone broth and place thyme/rosemary sprigs on top

  6. Cover dish with aluminum foil

  7. Place in oven for 90 minutes

  8. Remove dish from oven and increase temperature to 450F

  9. Remove thyme sprigs and drain all juice into a large bowl or measuring cup

  10. Mix cornstarch and water together in a small bowl

  11. Add cornstarch mixture into the broth and stir

  12. Pour broth and cornstarch mixture back over the chicken

  13. Place dish back into oven for 25-30 minutes

  14. Remove from oven and serve chicken and vegetables over a bed of rice
