Horchaita (horchata & Chai)
  1. Lightly crush cinnamon sticks, allspice berries, peppercorns, star anise, cloves, and ginger

  2. Toast rice in a large skillet over medium heat until golden (about 4-5 minutes), stirring often

  3. Add crushed spices to the rice and toast for 1 minute

  4. Add toasted rice and spices to a large bowl with 4 cups boiling water and tea bags, cover and soak for 30 minutes

  5. Remove tea bags, cover, and let soak for at least 5 hours or overnight in the refrigerator

  6. Blend the mixture on high for no more than 30 seconds

  7. Fine strain into a pitcher and add sweetened condensed milk, pinch of salt, evaporated milk, vanilla extract, and 2-3 cups milk (or 1 cup milk and 1 cup water for less creaminess)

  8. Mix well and adjust flavors to taste

  9. Top with ice and serve over ice with cinnamon stick garnish, stirring before each pour
