200g Instant mashed potato 400g hot water 150g AP flour 40g vegetable oil 10g salt 5g baking powder Mix the potato and water well (I used a stand mixer), then addthe rest of the ingredients and mix until a dough is formed. Cover and let cool. Cut into about 5 smaller balls, and roll each one out on a floured surface. Keep adding flour if the dough is sticking. This part you kind of just have to feel for the right thickness. I used an upturned bowl to cut a circle, then cut the circle in half to make it easier to cook them. I then scored each semi-circle with the back of a knife for easy separating later, but you could also just cut them into individual triangles.

Placed on a cast iron pan (no oil) and cook on a medium-low heat until the desired colour is achieved. Cool on a wire rack.
