Cheesy Chickpea Quesadillas
  1. Combine the ingredients listed above to make the chickpea mixture.

  2. Blend the cashew cheese sauce ingredients together

  3. Add a flour tortilla to a dry frying pan (don't turn the heat on yet) and spread half of the chickpea mixture in an even layer. Drizzle the cheese on top and smooth out to the edges. Place another tortilla on top and put the heat on high. After a few minutes, carefully check to see if the tortilla is browning underneath by lifting the edge. If it is, pop a plate on top of the frying pan and turn it upside down to flip it onto the plate. Then grab another plate the put it on top of the plate in the same way you did the frying pan. Flip the uncooked underside over to face you, then flip it back into the flying pan by placing the empty frying pan on top of the plate currently holding the quesadilla. See video for a guide.
