Chili Oil
  1. In a large heat-proof bowl combine crushed chillies, Chinese five spices and salt. Mix it well.

  2. Add minced garlic and sesame seeds on top.

  3. Heat the oil over medium-high heat at about 350°F/180°C.

  4. Add the ginger slices and fry them until golden brown. Discard the fried ginger.

  5. Gently pour the ginger-infused oil over the crushed chilli bowl. Stir it well.

  6. Let it cool completely, then keep it in a clean jar.
