Elote con Poblano (Mexican Street Corn)
  1. Whisk mayonnaise, lime juice, and chili powder together in a bowl until evenly combined. Set aside.

  2. Thaw fire-roasted corn/poblano mix.

  3. Add reserved mayonnaise mixture to corn and stir until evenly combined. Add cilantro and stir again. Add salt and pepper to taste.

  4. Sprinkle cotija cheese and green onion over the top. Garnish with a lime wedge.
