In a large pot, add in all of the chopped veggies, broth, beans, and spices.
Use a spoon to mix it well then place on high heat.
Cover the pot and let it come to a boil.
Once it has reached a boil, reduce the heat to low and simmer for 15 minutes, stirring occasionally.
After 15 minutes, check to make sure the potatoes are cooked all the way. If a fork goes through them easily, it is done.
Serve right away with some fresh parsley on top and enjoy! You can also keep leftovers for up to a week or freeze for a later date.
