Slice the potatoes into thin fries. Soak them in ice water for about 10–15 minutes, then pat them dry thoroughly. Place the fries in an air fryer basket, spray them with avocado oil, and season with salt. Air fry at 400°F for 20–25 minutes until golden and crispy.
In a bowl, combine the Greek yogurt, light mayo, ketchup, mustard, pickle juice, sweet relish, and caramelized onions. Season with salt and pepper to taste. Mix well and set aside.
Season the onion discs with salt and pepper. Sear them in a smoking-hot pan for a few minutes on each side until they are charred and softened.
Form the lean ground beef into two patties. Season them with salt and pepper in the pan. Before flipping, spread some yellow mustard on the top side of the patties. Flip and cook until done. Top each patty with a Velveeta cheese single and let it melt.
Place the cheesy beef patties between two of your seared onion discs.
Place the crispy air-fried fries in a large bowl. Roughly chop the onion-and-beef “Dutchman” and place it over the fries. Top with caramelized onions, a generous serving of the copycat spread, and some chopped yellow chili peppers (optional).
