In a bowl, combine the mayo, relish, mustard, pickle juice, paprika, garlic powder, and onion powder. Mix until well combined. I usually transfer this to a squeeze bottle of easy application, but this is optional.
Add the beef to a pan over medium high heat. Break it up, stir, and fry until just about cooked through. Move the beef to one side and add in the onion and garlic. Stir and sauté until fragrant. Mix well with the beef. Flatten the beef down and allow it to fry for a few minutes until a crust forms. Then break it up again and even it out in the pan.
Spread the cheese over the top and allow it to melt down. Turn off the heat and add the lettuce, pickles, and sauce. I zig zag the sauce over the top. This is where the bottle comes in handy. If you are not using a bottle, spoon it over. Top with the finely chopped onions and sesame seeds.
