Whisk eggs & sugar
Whisk together 2 eggs and ½ cup sugar until pale, fluffy and light.
Add dry ingredients
Sift in 1 cup all purpose flour, a pinch of salt, and Baking powder. Gently fold until it forms a smooth, thick batter.
Pipe coins
Transfer to a piping bag and pipe tiny coin sized circles onto a butter paper-lined tray.
Bake
Bake at 170°C (340°F) for 10–12 minutes, or until the edges are lightly golden.
Cool & store
Let cool completely & Store in an airtight container.
