Press the tofu for a few minutes (wrap in a towel and set something heavy on top).
Slice into ½-inch thick slabs.
Pat dry.
In a bowl, toss the tofu slabs with: oil, cornstarch, garlic powder, paprika, salt & pepper. You want a thin, dry coating that sticks.
Air fryer (best): 400°F for 12–15 minutes, flip halfway, cook until crispy on edges.
OR Oven: 425°F, bake on parchment for 20–25 minutes, flipping once.
Mix buffalo sauce and melted butter. Warm it for 15–20 seconds in the microwave so it coats easily.
Brush or drizzle the sauce over the crispy tofu slabs. Return to air fryer or oven for 2–3 minutes so the sauce bakes on.
